Guoqiao
Rice-Flour Noodle
Guoqiao Rice-Flour Noodle (Rice Flour Noodle Running through the
Bridge) has a history of over 100 years. It is prepared intricately
with refined stuff and there is a special way of eating it. Protein
and the essence of multiple vitamins are melted in a bowl, which
tastes delicious, oily though not greasy. It deserves to be called a
delicacy with rich nutrition, good-looking, good smell and good
taste. However, please take care, don't take the soup before

Steamed Chicken in Yunnan Style
As early as the period of Emperor Qian Long' reign of the Qing
Dynasty, the steamed chicken was popular among the local people in
southern part of Yunnan Province. The steamed chicken is prepared in
the following way: put the chicken meat cubes together with
condiments into the Yunnan steaming porcelain pot (which is in the
shape of a water chestnut) and steam it for 3 to four hours. The
chicken meat cubes taste tender and delicious and its soup, tasty,
winning universal acclamation.

Yiliang Roast Duck
Yiliang roast duck is prepared in a very special way. The duck
roasted in such a way that its skin becomes yellow in color and
tastes crisp, its meat, flaky and soft, sweet and tender, good
looking, good smell and very tasty indeed.
Foodstuff of Local Flavor
The meat dishes of local flavor are prepared with such skill as
roast, salt down, freeze, punch and warm up¡A and the utensils used
for the above-mentioned purposes are stone plate, fragrant bamboo,
sheepskin, cobble etc. Which appear to be the style and feature of
primitive simplicity and elegance. For instance, the roasted chicken
wrapped up with lemongrass prepared by the Dai nationality.
Yunnan Edible Fungus
Yunnan is situated at Yunnan and Guizhou plateau with numerous
mountains and dense forests, moderate climate, ample rainfall and
during Summer and Autumn, raining and clear weathers are interwoven,
which provide extremely favorable natural conditions for the growth
and multiplication of the edible fungus. There are a great variety
of Yunnan edible funguses with different tastes, the most precious
one of which in the Yunnan cuisine is "Delicacy from Land". Among
them are "Desert Cistanche" and Songer, "Zhusun" (a kind of edible
fungus found in bamboo groves in Sichuan Guizhou Provinces). In
addition, there are also such fungus as Niugan fungus (in the shape
of caw liver), morel, Qingtou fungus, ganja fungus and hedgehog
Hyundai fungus. |
